- Rack placement matters. The middle rack allows for even heat circulation which is a must for cookies. If you want a brown bottom on your baked goods, put it on the bottom rack - perfect for pies.
- Convection or conventional? Another way to get even heat is with convection, a setting which uses a fan to circulate heat around the cookie sheet. When using convection the cooking time can be 25 percent faster so check often.
